Anami Shall-HolmaIn a pot of hot water, add salt and 3 tablespoons of curry powder. Add 5 cups of basmati rice and cook until 70% done. Rinse the rice with cold water and set aside.
In a separate pot or large pan, add 1 cooking spoon of vegetable oil. Add the minced ginger and garlic, then the chopped onion. Fry for about 1 minute until fragrant.

Add the 70% cooked basmati rice to the pot. Stir gently to combine all ingredients. Cover and cook on very low heat for 15 to 20 minutes, allowing the rice to steam and finish cooking without becoming soggy.
Once the rice is soft and not soggy, add 1/2 cup of sweet corn and 1 small stalk of chopped spring onion. Stir gently, then turn off the heat. Serve hot.
