A delicious and easy-to-make recipe combining the rich flavors of Nigerian pepper soup with instant noodles, perfect for a comforting meal.
vaderPrepare the pepper blend: Blend 1 chilli red bell pepper (tatashe), 1 onion bulb, and 2 fresh peppers (atarodo) until smooth.
Heat 3 tablespoons of oil in a pot over medium heat.
Add 1/2 finely minced onion bulb to the pot and stir-fry for a few seconds.
Add 1/2 teaspoon minced garlic and 1/2 tablespoon minced fresh peppers, then continue to stir-fry for a few more seconds.
Pour in the prepared pepper blend along with 5 cups of water.
Add the noodle seasoning and 2 tablespoons of pepper soup spice to the pot.
Mix well to combine, then cover the pot and bring to a light simmer.
Add the 4 packs of noodles to the simmering stock.
Cover the pot for a few seconds to allow the noodle strands to separate, then submerge them into the stock.
Cover the pot and cook until the noodles are soft, about 3-4 minutes.
While the noodles are cooking, chop 5-8 scent leaves.
Transfer the shredded scent leaves into the pot.
Give it a final stir and immediately remove from heat.
Serve the pepper soup noodles in a bowl, topping with some of the soup and shredded scent leaves.
