Ingredients

  • 2 tbsp oil
  • 2 piece bell peppers
  • 0.5 piece onion
  • 2.5 piece Scotch bonnet peppers
  • Dried smoked catfish
  • 2 tbsp ground crayfish
  • 1 tsp salt
  • 1 tsp Knorr powder
  • 2 cup coconut milk
  • 1 cup chicken broth
  • 2 cup rice

Method

  1. 1

Roughly blend the bell peppers, onion, and Scotch bonnet peppers in a chopper or food processor.

  2. 2

Heat the oil in a pot, then add the blended pepper mixture. Cook until reduced and the raw pepper taste is gone.

  3. 3

Add the smoked fish and season with 1 teaspoon salt and the Knorr powder. Stir and fry for a few minutes.

  4. 4

Add the ground crayfish and continue frying until the mixture darkens slightly.

  5. 5

Pour in the coconut milk and chicken broth or water, then stir.

  6. 6

Add the washed rice. Taste and add more salt if needed.

  7. 7

Cover tightly and cook on low heat for about 30 minutes, or until the rice is tender and the liquid has been absorbed.

  8. 8

    Mix well and serve.
